2021 Cabernet Sauvignon was harvested on October 7, 2021 and yielded 7.106 tons of fruit. The 2021 season saw consecutive warm days throughout the months of August, September and October 2021.
The hillside elevation of 1,406 Ft. above the Valley floor and volcanic rocky soil conditions give the Cabernet a deep garnet coloring, deep fruit complexities, velvety chocolate and earthy flavors with an elegant finish. The wine should pair nicely with Beef, Lamb, Pork, Chicken, and Fish dishes.
